"1 medium sweet potato 3 oz Lifetime Sharp Cheddar, grated (about 1 cup)
Bring potato and water to cover to a boil. Reduce head and simmer, covered, until fork-tender, about 15 minutes. Drain and let cool, then peel and thinly slice crosswise. Heat an 8-inch nonstick skillet over medium low heat. Sprinkle half the cheese into the pan, covering the bottom. Place potato rounds in a single layer over the cheese, then top with remaining cheese. Cook until the cheese melts and is bubbling around the edge, 4-6 minutes. With a rubber spatula, slide frico onto a plate. Invert frico back into the pan and cook until the cheese is bubbling around the edge, 4-6 minutes longer. Slide onto the plate and cut into wedges."
