CREPES WITH “NUTELLA” AND BANANA SPREAD Makes about 2 crepes. ¼ cup oat fiber 1/3 cup almond milk 3 egg whites 1 pkt stevia 1/8 tsp salt ½ tsp cinnamon ½ banana ¼ cup ready to eat fat/free chocolate Jell-O pudding
Whisk egg whites and milk together, add FD fiber, stevia, salt and cinnamon. Heat non stick skillet over medium high heat, make sure skillet is HOT before spooning in a thin coat of batter using a ladle, swirl around, cook for a minute or so until set/bubbles on top, then fold like an omelet and finish cooking. Because batter contains no fat it will be extremely difficult to “flip” the crepe, hence rolling it like an omelet is a better option. Spoon 2 tbsp of fat free/sugar free chocolate Jell-O pudding on top of crepe and top with ¼ of a banana. Nutritional info per crepe (with topping): 89.5 calories, 1.35g fat, 15.5g carbs, 6.9g protein.
“-eat your pancakes, and have them too!” from the book: FD fiber, or oat fiber, lowers LDL (bad cholesterol), cleans your colon, balances your blood sugar and it has no antinutrients like wheat bran has which can cause adverse reactions in your body if used raw. As with all fibers, feel free to use as much as you want, but be aware that fiber can cause bloating, abdominal discomfort etc. I fell in love with this product after I created my FD pancakes. I love pancakes and this fiber “flour” made me feel like I had pancakes every day! I asked my chef-savvy client turned friend Sunny Gandara if she would like to make a FD approved recipe collection since I am just no fan of making recipes... I just heap, eye ball, remember, improvize... And that doesn’t do great, easy to use recipes! Sunny transformed her body from out of shape to shredded, she works with food and wine and had to be pretty creative with her “boring diet foods” to sustain the fitness lifestyle needed to get in contest shape.
