"OATMEAL RAISIN COOKIES Makes 6-8 large cookies ¼ cup FD fiber ¼ cup oatmeal ¼ tsp salt ½ tsp baking powder 1 tsp cinnamon ½ cup erythritol 1 tsp vanilla extract 3 egg whites 2 tbsp unsweetened vanilla almond milk 2 tbsp unsweetened coconut flakes 2 tbsp raisins
Preheat oven to 350F. Line a baking sheet with parchment paper. Combine fiber, oatmeal, salt, baking powder, cinnamon and erythritol and set aside. In separate bowl, whisk egg whites together until loosely formed, then add vanilla extract and milk. Pour into dry ingredients, whisk together until smooth, then add raisins and coconut flakes. Place dollops of batter using a spoon onto baking sheet, place in oven and bake for 8-10 minutes. Nutritional info: avg. 37 calories per cookie, 0.8g fat, 5g carbs, 2g protein."
